Okay, here it is. My version of an old Louisiana standby and Monday/Washday tradition:


TA DA! *lol*

Ed'sRedBeans


That's red beans and rice with country sausage, slow simmered for about six hours until tender and creamy. The sausage can be cut with an ice cream stick. I added a side of pan-fried fish just because I could although the protein content of the dish makes another meat or fish simply an extravagance. I also made it look kinda fancy, even though this is what the "common people" eat. Of course the fancy restaurants will serve it too and charge you fancy prices. Hope you don't mind. A big pot to feed a whole family probably cost me about $6-7.

Look familiar K1? This is what it should look like K2. Hope you guys are enjoying it! :)

I think I'm k2 as Ed is Ed2 on my journal...my husband's name is Ed, so that avoided some, but not all, confusion. :)

Of course I've had my head in the clouds when it wasn't over the range.

Did you mean it "should" look like that but I shouldn't have. This is the first time you have genuinely gotten me confused. But then I'm just full of beans today.

Can't wait to see the new videos, but I've got to run to my parents' house for now.

oh i was thinking of how mine probably looked and this being how it should look - you know after my brownie experiment that went awry and you were afraid to see what i might've done to your bean recipe...

Thank you for posting that. Now I'll know when they're done. :) They remind me of the baked bean dishes we had up north, but they were made with big white beans and were sweeter. I think I'll like your more. I prefer spicy to sweet. ;)

Thanks K2 (just an arbitrary designation for my comment). You never know how long they'll take because it depends on the age of the dry beans. Long slow cooking is the key but some beans just won't fall apart right and they won't get creamy enough. Good luck ... at least to Mr. Ed. *lol*

Okay, so I'll have to make sure to see when they re-stock the dry beans at the local store; either that, or get someone to get me some from out of the storeroom. They hate me there, so that won't be a problem. :P And, just so you know, Mr. Ed learned how to cook from me and my mom. *g* See, training works. lol!!

doesn't look too bad ed and I might even try that fish if it were in front of me. :D I love red beans and rice.
Its almost 8 here. Sun is setting soon and I am so exhausted I could pass out but Ian is still up. Mike passed out on the living room floor. LOL

Tilapia (fish) is very mild and sweet. I could make some shrimp dishes that might tempt you too. I really have fun in the kitchen sometimes, even if I'm only cooking for myself.
