Midnight Snacks

I feel terrible! I just had one of my favorite midnight snacks from long ago. It takes twenty minutes to make which makes it too convenient.

Boil some thin spaghetti a little more than al dente. Then grate some good parmesan cheese.

In a cast iron pan, gently saute about 10-12 crushed cloves of garlic in some good extra virgin olive oil with a little salt and plenty black cracked pepper. Remove when slightly brown and not too bitter. Add a knob of butter.

Put spaghetti in plate and drizzle with garlic and olive oil/butter mixture. Add parmesan and toss slightly. I had no wine but a frosty mug of cold beer went nicely. Garlic toast would have been nice but I have to stop somewhere.

There it is! My famous midnight snack from the eighties. Now where's that Pepcid?

Any more guilty pleasures out there?

It sounds delicious but probably more trouble than I'd go to for a midnight snack. To me a midnight snack should be no more trouble than ripping open a bag of chips.

Lazy bastard, aren't I?

No dip? Now that WOULD kill me at midnight. I'm allergic to dairy and lactose intolerant to boot. Still...

Whether I have dip or not depends on the kind of chips I'm eating.

I make something VERY similar to that w/ onions and mushrooms... *drool*

I saute the vegetables, then add the cooked spaghetti and finish by adding the cheese... It is sooooo good - but probably NOT a good idea before bed! *lol*

I've made it like that for dinner with green onions, mushrooms and zucchini. There is something very raw and satisfying (also quick) when you make it with the garlic and olive oil by itself. And funny, if I don't eat too much of it at night, I sleep like a baby.

hmm I may have to make that for supper one time..:P



As for midnight snacks, in years past I'd munch on cereal or chips (or the occasional piece of cake).

A little pounded and breaded chicken breast on the side and a nice salad and you're rolling. Also see the tips on adding your favorite vegetables above.
